Gorgeous and colorful Mediterranean watermelon salad with Feta cheese and mint. Perfect for hot days or as a light and healthy side dish.

Ingredients

For the salad:

  • 5 cups cubed seedless watermelon
  • 1/2 cup red onion finely chopped
  • 1/3 cup fresh mint chopped
  • 4 oz (110g) feta cheese, crumbled (about 1 cup)

For the dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons honey (or sugar)
  • 2 tablespoons fresh lemon juice

Instructions

  • In a large bowl, combine the watermelon, onion, mint, and Feta.
  • In a separate small bowl or a jar, whisk together olive oil, lemon juice, and honey until well combined.
  • Pour the dressing over the salad ingredients before serving and toss gently to coat everything evenly.
