I’ll be honest—mornings are not my thing. Between getting everyone out the door and juggling my own schedule, breakfast has to be effortless. That’s where chia pudding comes in. It takes just a few minutes to mix, sits overnight, and is ready to grab and go. Plus, it’s creamy, filling, and totally customizable!

Chia pudding in a cup with berries

I started making chia pudding a few months ago while searching for an easy, healthy, and portable breakfast. Oat milk turned out to be the perfect base—it’s naturally sweet and gives the pudding a smooth, slightly nutty flavor. Over time, I’ve experimented with different flavors, but I always come back to this simple version.

Why You’ll Love Making Chia Seed Oat Milk Pudding

  • Super easy – No cooking required.
  • Customizable – Change up the flavors, toppings, and sweetness to suit your mood.
  • Nutrient-packed – Loaded with fiber, protein, and omega-3s for a healthy start to your day.
  • Dairy-Free – Oat milk makes it extra creamy without any dairy.
  • Perfect for meal prep – Make a batch and have breakfast ready for the whole week.

Ingredients Overview

Oat milk: Oat milk is a fantastic dairy-free alternative that’s naturally sweet, smooth, and slightly nutty. It blends beautifully with chia seeds, creating a rich and creamy pudding. And yes! You can make this recipe with any milk of choice.

Chia seeds: Packed with fiber, omega-3 fatty acids, and protein, chia seeds help thicken the jam naturally while adding a nutritious boost. These little seeds absorb liquid and create a gel-like texture, making them a great alternative to traditional pectin. You can find chia seeds at most grocery stores, health food stores, or online retailers.

Honey or maple syrup: Enhances the flavors and adds a touch of sweetness.

Pro-Tips for Chia Seed Oat Milk Pudding

  • Texture: If you like a smoother pudding, blend it before chilling.
  • Consistency: Overnight is great, but in my opinion, letting it sit for 24 hours allows for even better absorption and a creamier texture.
  • Boost the flavor: Mix in cinnamon, vanilla, and cocoa powder.
  • Meal prep: Make a few jars at once for easy breakfasts all week.
