Equipment

  • Parchment paper
  • Baking sheet

Ingredients

  • 1 cup uncooked quinoa
  • 4.23 ounces/ 120g high-quality dark chocolate
  • 1/3 cup freeze-dried berries I buy mine from Trader Joe’s

Instructions

  • Add the quinoa to a large skillet over medium heat. Cook, stirring often, for 5-6 minutes or until the quinoa becomes golden and starts to pop.
  • Place the chopped dark chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring thoroughly between each, until completely melted.
  • Break the freeze-dried berries into small pieces or place them in a food processor and pulse until finely ground.
  • Stir the toasted quinoa into the melted chocolate and add the processed freeze-dried berries. Mix until well combined.
  • Pour the mixture onto a baking sheet lined with parchment paper and spread it out evenly.
  • Place the baking sheet in the freezer for about 1 hour or until the chocolate is fully set. Once set, break the bark into pieces and enjoy! Keep refrigerated.
