Arrange lettuce/mix greens, tomatoes, cucumbers, red onion, and cheese on a plate or in a bowl.
Place the olive oil and lemon juice into a jar. Shake it, and drizzle over the salad. Toss well.
Add salt and pepper to taste.
When you’re ready to serve, toss in the pita croutons.
Garnish with sumac and mint leaves or parsley and serve!
