Baked Sweet Potatoes

Ingredients

  • 3-4 large sweet potatoes washed
  • 3-4 Tablespoons (45-60 ml) olive oil
  • ¼ teaspoon cinnamon
  • 2 tablespoons chopped fresh rosemary
  • salt to taste
  • *Optional* 1 teaspoon chopped fresh thyme

Instructions

  • Preheat the oven to 400°F/200°C.
  • Line a baking sheet with parchment paper or foil.
  • Slice the potatoes in half lengthwise, brush them with oil.
  • Sprinkle with cinnamon, rosemary, thyme, and salt.
  • Roast cut-side up until lightly browned and tender for about 35 to 45, flipping halfway through.
