Sabich- The Ultimate Sandwich

Description

Ingredients

  • 1 eggplant sliced into rounds
  • 2 tomatoes
  • 2 cucumbers
  • a handful of parsley leaves
  • juice from half a lemon
  • 4 Pita bread
  • 2-3 pickles sliced
  • 4 hard-boiled eggs sliced
  • 1/2 cup (120 grams) tahini paste (raw tahini)
  • olive oil for brushing
  • *Optional* Amba (mango chutney)/hot sauce/Harissa

Instructions

The eggplant:

  • Preheat the oven to 400°F/180°C.
  • Brush the eggplant slices with olive oil and season with salt on both sides. Roast on a baking sheet until golden brown and soft, about 30 minutes.

The salad:

  • Cut the tomatoes and cucumbers very finely.
  • Toss the tomatoes, cucumbers, parsley leaves, lemon juice, and some salt and pepper in a medium bowl.

The Pita:

  • Slice 1 inch (2.5 cm) from the top of a pita and open the pocket.

Assemble the sandwich:

  • Put in each Pita- a few slices of eggplant, a few spoonfuls of the salad, pickles, and an egg.
  • Drizzle tahini Sauce and Amba *optional* and ENJOY!

Tips and Tricks:

  • Make a “Sabich Bowl”- drop the pita and put all ingredients in a bowl like a salad.
  • Spread hummus instead of tahini.
  • Add falafel balls.
