Mashed Cauliflower

Mashed cauliflower with sweet caramelized onions is the most delicious and creamy side dish. It’s irresistible! The cauliflower is a great substitute for potatoes if you are looking to cut on carbs. A little bit of sour cream will make them taste rich- just like the real thing. The flavor is unbelievable!

Equipment

Ingredients

  • 1 big head of cauliflower or two small, cut into florets
  • 1 large onion
  • 2 garlic cloves
  • 3 tablespoons 45 ml olive oil
  • 1/2 teaspoon (5 grams) granulated sugar
  • 1/4 cup (60 ml) sour cream light
  • 1 teaspoon 10 grams salt+ a little more for taste
  • pepper to taste

Instructions

  • Place the cauliflower and one teaspoon of salt in a large pot, cover with water. Bring to a simmer and cook until very tender, 15 to 20 minutes. Drain. In the meantime, caramelize the onion:
  • Finely chop the onion and crush the garlic.
  • Heat up 1-2 tablespoons of olive oil in a skillet. Add onion, garlic, and sauté until translucent, with some pieces starting to turn gold. Add sugar and sauté until golden brown. Remove from heat.
  • Place the cauliflower in a food processor. Add 1 tablespoon olive oil and light sour cream. Puree until smooth.
  • Season with salt and pepper.
  • Stir caramelized onions into mashed cauliflower. Place in a serving dish.
