Mashed cauliflower with sweet caramelized onions is the most delicious and creamy side dish. It’s irresistible! The cauliflower is a great substitute for potatoes if you are looking to cut on carbs. A little bit of sour cream will make them taste rich- just like the real thing. The flavor is unbelievable!
Place the cauliflower and one teaspoon of salt in a large pot, cover with water. Bring to a simmer and cook until very tender, 15 to 20 minutes. Drain. In the meantime, caramelize the onion:
Finely chop the onion and crush the garlic.
Heat up 1-2 tablespoons of olive oil in a skillet. Add onion, garlic, and sauté until translucent, with some pieces starting to turn gold. Add sugar and sauté until golden brown. Remove from heat.
Place the cauliflower in a food processor. Add 1 tablespoon olive oil and light sour cream. Puree until smooth.
Season with salt and pepper.
Stir caramelized onions into mashed cauliflower. Place in a serving dish.
