Alfajores Truffles

Equipment

  • *Optional* A sealed bag like Ziploc

Ingredients

  • 9 oz (250 grams) Graham crackers/ tea biscuits/ Nilla wafers
  • 3/4 cup (180 ml) heavy cream/ half and half/ milk
  • 10 oz (300 grams) Dulce de Leche
  • 1 cup (100 grams) shredded coconut unsweetened

Instructions

  • Put the Graham crackers/ biscuits in a double sealed bag and beat them with a rolling pin or a can. The goal is to break them into small pieces. The main thing is not to grind into thin crumbs. Transfer to a large bowl.
  • Add cream and dulce de Leche. Mix well to a very thick mixture.
  • With wet hands, shape the mixture into small balls.
  • Roll in coconut.
  • Keep refrigerated until serving.
