Fattoush Salad

Ingredients

For the pita croutons:

  • 1 large pita bread or naan
  • 1/4 cup (60 ml) olive oil

For the salad:

  • 2 cups mixed greens or any favorite lettuce
  • 3 tomatoes chopped
  • 3 small cucumbers (I like Persian cucumbers), peeled and chopped
  • 1 red onion thinly sliced
  • 1/2 cup feta cheese crumbles or small cubes
  • 1 Tablespoon (15 ml) lemon juice
  • 3 tablespoons 45 ml olive oil
  • salt and pepper to taste

For garnish:

  • 1/2 teaspoon sumac
  • a handful of mint leaves or parsley

Instructions

For the pita croutons:

  • Preheat oven to 400°F/200°C.
  • Tear up the pita (bite-size pieces) and brush with olive oil.
  • Bake for about 7-10 minutes, or until lightly browned and crispy. Watch carefully, as they tend to burn easily.

For the salad:

  • Arrange lettuce/mix greens, tomatoes, cucumbers, red onion, and cheese on a plate or in a bowl.
  • Place the olive oil and lemon juice into a jar. Shake it, and drizzle over the salad. Toss well.
  • Add salt and pepper to taste.
  • When you’re ready to serve, toss in the pita croutons.
  • Garnish with sumac and mint leaves or parsley and serve!
