No-Bake Energy Balls

Sweet and packed with only good-for-you ingredients, they're the perfect healthy snack!

Ingredients

  • About 20 units (200-300g) Medjool dates
  • 2 Tablespoons (30ml) tahini paste (raw tahini)
  • 2 Tablespoons (20g) cocoa powder
  • 1/2 cup (80g) nuts of your choice like pecan, cashew, almond, walnut unsalted
  • 1/4 Teaspoon salt
  • 1/2 cup (50g) shredded coconut unsweetened

Instructions

  • Pit the dates and soak them in hot water for 10 minutes. (If the dates are super soft and juicy, then you can probably skip this step.) Drain.
  • Add the dates, tahini, cocoa powder, nuts, and salt to a food processor. Blend all ingredients well until they form a sticky dough.
  • With wet hands, carefully scoop out approximately 1-2 tablespoons of the mixture and roll small balls.
  • Roll them in shredded coconut, and keep in the refrigerator.

Notes

Customize your energy balls with a variety of mix-ins like:
  • Nut butter (e.g., almond butter, peanut butter).
  • Natural sweeteners like honey, maple syrup, or agave nectar.
  • Enhance the flavor with ingredients like vanilla extract, cinnamon, nutmeg, and cardamom.
  • Dried fruits (e.g., raisins, cranberries, apricots), chocolate chips, coconut flakes, or even coffee grounds for a caffeine kick.
  • Toppings: Roll your energy balls in coatings like cocoa powder or crushed nuts.
