Carefully split the Medjool dates lengthwise to remove the pit and stem without breaking them in half
Place chocolate in a heatproof bowl and microwave for 30 seconds at a time, stirring after each time. Once the chocolate looks almost melted, stir the chocolate until it is completely smooth.
Lightly press three pecans into each date to create a triangle shape.
Fill the center of each date with one teaspoon of tahini.
With a spoon, drizzle enough chocolate to fill the date, put extra chocolate where the pecan intersects with the dates.
Sprinkle with sesame seeds or flax seeds.
Freeze for a few hours and enjoy. Store in the freezer.
