Hard boiled egg cooker
Ingredients

eggplant sliced into rounds
▢
2
tomatoes
▢
2
cucumbers
▢
a handful of parsley leaves
▢
juice from half a lemon
▢
4
Pita bread
▢
2-3
pickles sliced
▢
4
hard-boiled eggs sliced
▢
1/2
cup (120 grams)
tahini paste (raw tahini)
▢
olive oil for brushing
▢
*Optional*
Amba (mango chutney)/hot sauce/Harissa
Instructions
The eggplant:
Preheat the oven to 400°F/180°C.
Brush the
eggplant
slices with
olive oil
and season with
salt
on both sides. Roast on a baking sheet until golden brown and soft, about 30 minutes.
The salad:
Cut the
tomatoes
and
cucumbers
very finely.
Toss the tomatoes, cucumbers,
parsley leaves
,
lemon
juice
, and some
salt
and
pepper
in a medium bowl.
The Pita:
Slice 1 inch (2.5 cm) from the top of a
pita
and open the pocket.
Assemble the sandwich:
Put in each Pita- a few slices of eggplant, a few spoonfuls of the salad,
pickles,
and an
egg.
Drizzle
tahini
Sauce and
Amba
*optional* and ENJOY!
Tips and Tricks:
Make a “Sabich Bowl”- drop the pita and put all ingredients in a bowl like a salad.
Spread hummus instead of tahini.
Add falafel balls.
