Somedays, I do not feel like cooking. But I still have the “what’s for dinner?” problem. And on those days, my answer is always eggs. Eggs are high in protein, tasty, and done in minutes. If you have not tried transforming an omelet into a pizza, you should try!

  • 2 eggs
  • 1 teaspoon butter or oil for greasing
  • 1/4 cup 4 tablespoons pizza sauce
  • 1/4 cup shredded mozzarella
  • your favorite toppings (olives, mushrooms, peppers, onions, corn, feta cheese)


  • In a small bowl, beat the eggs
  • In a skillet over medium heat, melt butter/spray oil.
  • Add eggs mixture.
  • Cook until you can get a spatula under it and flip without breaking it.
  • When it is flipped over, spread with pizza sauce.
  • Top with mozzarella and your favorite toppings. Cover the pan and cook until the cheese is melted.
  • Serve immediately.
