Here is a lovely, simple recipe that will make your mornings a happier time (or lunch or dinner). A great way to get your protein and vegetables. So delicious and easy to make. Serve with fresh bread or pita.

Ingredients

  • 2-3 tablespoons (30-45 ml) olive oil
  • 1 large yellow/white onion chopped
  • 4 garlic cloves crushed
  • 10 oz (280 grams) baby spinach
  • salt and pepper to taste
  • 1/2 cup (125 ml) heavy cream or half and half
  • 2-4 eggs
  • *Optional* feta cheese for sprinkling

Instructions

  • Heat the olive oil in a large pan set over medium heat.
  • Add the onion and cook, stirring occasionally, until softened, 6 to 8 minutes.
  • Add the garlic and cook, stirring occasionally, until fragrant, 1 to 2 minutes​.
  • Add the spinach, turn the heat to low, cover, and cook, until the spinach is very soft, about 5 minutes.
  • Add cream and sprinkle with salt and pepper. Cook, occasionally stirring, for about 10 minutes until cream thickened and reduced.
  • Break the eggs into a small cup and gently slide them into the pan.
  • Cover the pan, and cook until the whites are set to your liking for 6 -8 minutes.
  • Remove the pan​ from the heat and sprinkle with feta *optional*.
  • Serve immediatly with fresh bread or pita.
