Fig season is here!
This simple salad recipe is the perfect side dish or a light meal in itself. So beautiful and elegant, and you can effortlessly impress some guests. It is best to make this when figs are fresh and in season.

Equipment

Ingredients

For the salad:

  • 3-4 cups mix greens (like romaine, kale, spinach, arugula) washed and dried.
  • 8 small figs cut into halves
  • 7 oz (200 grams) fresh mozzarella cheese

For the sauce:

  • 4 tablespoons (60 ml) olive oil
  • 4 tablespoons (60 ml) apple vinegar
  • 4 tablespoons (60 ml) soy sauce
  • 4 tablespoons (60 ml) granulated sugar

Instructions

  • Arrange mixed greens and figs on a plate or in a bowl. Tear up the mozzarella into small pieces and place it on top.
  • Place all the dressing ingredients into a jar. Shake it, and drizzle about half over the salad. Toss well, adding more dressing if needed.

Tips and Tricks:

  • Add ½ green apple/pear thinly sliced
  • Add ¼- ½ cup candied nuts
  • Add goat or blue cheese insted of mozzarella
